I am unofficially attempting to do the Eat from the Pantry Challenge over at Life as Mom. This challenge is to make your meals with what you already have. For the above menu, I have all of the ingredients except some of the vegetables. I do not need to buy any meat this month, which should save me some money. Some of the meals above are from the Once a Month Cooking (OAMC) Challenge (also hosted by Life as Mom), last month.
The OAMC proved to be beneficial in some ways, however, since it is just me, I found there wasn't as much variety and I was eating the same things over and over throughout the month. It allowed me to be lazy which is not entirely a good thing. I think, for future months, I will still do one or two days of cooking but I won't over do it. I found I still had to make a few meals over the month that lead to more stockpiling in my freezer just to give myself some variety.
I have been attempting to do an entire month's worth of menu planning but as you can see I could not get even the entire week filled. I may need some help on this. It is harder than you think to menu plan for one single person, but I am doing my best to thrive.

I am SO not a meal planner...LOL. But I think it's great that you are. Nick bought some stuff at the store and kept it in the fridge so maybe he plans to cook it or wants me to...anyway, I generally just wing it.
I tried to plan a week worth of meals once. Got to day 2 and changed it - just doesn't seem to work for me. So now I do it one day at a time, though I do plan weekends so that I don't have to go to the store on Sat/Sun.
Yum! We're attempting to clean out the pantry and freezers before we move, so we're having mish-mash dinners for the next month of whatever we can throw together!
Yummy. I have to figure out tonight's dinner. I have some leftover crockpot chicken cacciatori....was thinking soup but everyone here says they're souped out. So. I'm thinking maybe wraps with that leftover and some rice and cheese???? And some fresh veggies on the side.
oooh! Everything looks awesome- especially tonight's Chicken Terriaki wraps! Yum! What do you put in them besides chicken? Rice?
Tonight, I am trying something new. Basically like fancy nachos. A layer of Hint of Lime Tortilla chips, then ground turkey spiced with tortilla seasoning, and cheese. Bake it until it is melty, and then take it out and top it with tomatoes, olives, avocado, and sour cream. Sounds good- we'll see how it turns out!! :)

I am sooo bad at planning meals. I use to be good at it many years ago but the past few years I seem at a lost.
I'm working on my meal planning ... it is hard because no one in the family likes the same thing. I think I'll just make what I want!
